With this efficiency also comes quality: once available only to commercial kitchens, the sheet is made of professional-weight aluminized steel, so it won't buckle under intense heat and will consistently provide fast and even heat distribution. No need to turn the sheet midway through baking. Bakers unaccustomed to heavy-gauge aluminized steel should pay close attention at first since foods bake (and burn) more quickly. The pan will gradually darken with use, which will speed up baking time and require slightly lower oven temperatures.

The traditional uncoated surface of this sheet makes it extra rugged and a great conductor of heat, but this does mean butter, oil, or parchment paper should be used to prevent sticking.
